Which great plants do you recommend that are underused/underappreciated?

I’m hoping to find some gems here.

Mine is a crab apple: Malus prairie fire. Yes it’s not native but it’s a beautiful small tree with dark brown stem and branches, purple foliage that turns dark green, plus pink flowers and small purple fruits which are popular with wildlife.
