Strawberries in polytunnel over winter

I’ve got a couple dozen potted strawberry plants in my polytunnel. I’ve been watering them a couple times a week now it’s gotten cooler. This week im thinking of repotting them and potting on any runners.

What’s the best thing to do with them throughout the winter?

They are still very leafy and green, should I keep them in the polytunnel and if so how much watering do they like in winter? I’ve seen talk of them dying off, removing brown leaves and covering with straw.
