Do all ornamental trees blossom and have a strong scent?

I’m looking to plant 2 medium sized shade trees in our backyard in Adelaide. I love the look, shape and canopy cover of the ornamental pears in our local area, many of which I think might be the Manchurian variety. The internet suggests all ornamental pears blossom and have that strong scent, which would rule them out as an option for me. However, many of the local ornamental pears don’t seem to blossom at all or have very few blossoms. Does anyone know if there’s a variety/s which don’t blossom?

Or alternatively, does anyone have recommendations for non-flowering shade trees that get to about 6m high and 4m wide?
