Best hedging variety for lavender

Hey Fellow Gardeners, I want to use lavender for hedging and I wanted to know which variety is the best suited. I would essentially like a edible variety that ensures I get full value. Plus I would like to know what variety is this? Any recommendations on where to buy from? I’m in the western suburbs of Melbourne.
