Would you save the green stalk?

This rose is now more wood than plant. I think it’s beyond pruning back to a sensible height so plan to take a saw to it over the weekend.

There is one green stalk in the middle, if I leave it how likely is it grow side shoots next year and bush out or am I just delaying the inevitable?
